coconut treat truffles (makes 16)
I found this great blog on Facebook called “Peanut butter girl”
and it’s a young Irish girl who blogs about her exercise regime and posts tasty
but healthy foods. She is an inspiration
and I admire what she is doing. She is
very determined and dedicated to what she loves doing.
- ½ cup peanut butter
- ½ cup chocolate spread
- 1 tblsp cocoa powder
- 1 tblsp maple syrup
- 11 pitted dates
- 1 tsp vanilla extract
- Medium desiccated coconut
- Using a 1tsp measure, scoop out the mix into a ball and roll between you hands.
- Then roll each ball in the coconut.
- Set on a tray in the fridge to chill and firm up.
You could add in cranberries or hazelnuts.
You could use crumbled walnuts for rolling also.
Yummy yummy, with a cup of coffee!
