Soups are a great way to use up remaining vegetables, easy
to whip up and the best is, you can make a
batch and freeze it.
It’s great for all the family……the kids get their veg in and
we get a fat free yummy soup!
Here is the easiest, quickest fat free soup! I make it regularly:
Ingredients:
- 2 medium carrots
- 1 medium parsnip
- 1 medium courgette
- 1 large onion
- 1 green pepper
- 1 large clove garlic
- 5-10 mushrooms
- 1 vegetable stock (I use marigold yeast/gluten free veg bouillon)
- 1 tin chopped tomatoes
Recipe:
- Chop up all ingredients
- Put all into large pot/skillet
- Add stock cube mixed with H20
- Bring to the boil
- Boil on low-med heat for 1 hour
- Liquidise!
This will make a thick soup.
You can liquidise it in batches, adding a little water each time.
