Ham & Veggie omelette

Healthy, tasty, filling Ham and Veggie omelette.
Easy to whip up, it's nutritious and will keep you full for a long time!
I use chopped veggies and free range eggs.
Great for brekkies and brunches!









  • Spray non stick pan with some frylite or drizzle with oil
  • Stir fry chopped veggies of choice.  I've used red, green and yellow peppers; white onion; mushrooms; tomatoes.  Season with salt and pepper. Gently stir fry for few minutes - they will simmer in the omelette also so don't let them go too soft.  I like a little crunch. 
  • In a bowl whisk up 4 eggs with salt, pepper, parsley and spices if you wish.  I like chilli flakes or paprika or cayenne pepper to give it a little kick.  
  • Making sure your veggies are spread out on pan, pour in the egg mix. Sprinkle some grated cheese and your chopped cooked ham.  Do not mix..... Cover and let to set. Takes about 8 minutes. 

  • Once set and cooked, gently slide your omelette onto a plate and enjoy!
