Choc & date coconut treat truffles

Chilling as we speak !
I found this great blog on FB called "Peanut Butter Girl" and it’s a young Irish girl who blogs about her exercise regime and posts tasty but healthy foods.  She is an inspiration and I admire what she is doing.  She is very determined and dedicated to what she loves doing.  

This recipe is a variation of her Protein bites. 
• ½ cup peanut butter
• ½ cup chocolate spread
• 1 tblsp cocoa powder
• 1 tblsp maple syrup
• 11 pitted dates
• 1 tsp vanilla extract
• Medium desiccated coconut 

• Put everything except the coconut into a mixer and mix until dates are chopped.
• Using a 1tsp measure, scoop out the mix into a ball and roll between you hands.
• Then roll each ball in the coconut.
• Set on a tray in the fridge to chill and firm up.

You can vary this in so many ways.  
You could add in cranberries or hazelnuts.
You could use crumbled walnuts for rolling also.
