The simple basic Madeira mix

My basic Madeira recipe is a must have.













When i started cooking for my family, one of the first and basic things i learnt to do was bake some buns!
It's simple and once you've done it, it's like riding a bike......you'll never forget.  You'll never need the recipe again. The best thing is.....you can turn the basic mix into anything.
It can be used for simple cake mix or fairy buns.  Or you can fiddle around with ingredients and flavours to come up with your own variation.
The kids love baking buns and after, they can have fun topping with favourite icings and toppings.

My variations are: 

  • chocolate chip buns
  • coffee cake
  • chocolate cake
  • fruit cakes
  • queen buns
  • occasion buns: colour your icing for St Patrick's day/Easter/Halloween etc
  • birthday cake
  • Madeira cake: jam & cream; chocolate icing; vanilla icing
  • banana cake (add 2 mashed bananas to the mix, a shake of cinnamon and a drop of vanilla, bake in                          greased cake tin.  Cut into squares/slices.  Perfect accompaniment for a cuppa!)
The list really is endless !!

And here is the basic mix recipe:
  1. Butter together 6oz butter and 6oz white sugar
  2. Add 3 eggs, 1 at a time
  3. Add a spoon of flour to the last egg, so as not to curdle.
  4. Add 4oz flour 
  5. Mix until smooth
  6. Now, you can add to this whatever flavours and colourings you fancy.  
  7. For a basic bun mix i add a splash of vanilla & a dash of cinnamon
  8. Add the mixture to bun cases for buns
  9. Add it to 2x cake tins to build a cake
Note: modify your ingredients to suit what you are making, whether it's a couple of buns or a big birthday cake.

So, this is your basic bun mix.  
Try and test your own versions.  
You can do anything you want.......HAVE FUN !!
